Granola

Ingredients

  • 2 cups whole rolled oats
  • 3 oz sliced almonds (half a bag)
  • ½ cup coconut flakes
  • ¼ cup ground flaxmeal
  • ½ teaspoon cinnamon
  • ¼ teaspoon sea salt
  • 2 tablespoons melted coconut oil
  • ¼ cup maple syrup
  • 2 tablespoons creamy almond butter
  • ⅓ cup raisins (optional)
  • Honey for drizzling

Instructions

  1. Preheat oven to 300°F and line a baking sheet with parchment paper.
  2. In a large bowl, combine oats, almonds, coconut flakes, raisins (if using), cinnamon, and salt. Drizzle in coconut oil and maple syrup, then add almond butter. Stir until combined.
  3. Scoop granola onto the baking sheet and press into a 1-inch-thick oval. This encourages clumping.
  4. Drizzle with honey in a crosshatch pattern.
  5. Bake for 15 minutes, then rotate the pan and gently break apart granola with a fork.
  6. Bake for 10-15 minutes more, until golden brown.
  7. Let cool for 15 minutes before serving.

Notes

  • Raisins are delicious but optional - some kids prefer granola without them.
  • Pressing mixture into an oval before baking creates better clumping.
  • Store in an airtight container for up to one week.
