Granola

Ingredients
- 2 cups whole rolled oats
- 3 oz sliced almonds (half a bag)
- ½ cup coconut flakes
- ¼ cup ground flaxmeal
- ½ teaspoon cinnamon
- ¼ teaspoon sea salt
- 2 tablespoons melted coconut oil
- ¼ cup maple syrup
- 2 tablespoons creamy almond butter
- ⅓ cup raisins (optional)
- Honey for drizzling
Instructions
- Preheat oven to 300°F and line a baking sheet with parchment paper.
- In a large bowl, combine oats, almonds, coconut flakes, raisins (if using), cinnamon, and salt. Drizzle in coconut oil and maple syrup, then add almond butter. Stir until combined.
- Scoop granola onto the baking sheet and press into a 1-inch-thick oval. This encourages clumping.
- Drizzle with honey in a crosshatch pattern.
- Bake for 15 minutes, then rotate the pan and gently break apart granola with a fork.
- Bake for 10-15 minutes more, until golden brown.
- Let cool for 15 minutes before serving.
Notes
- Raisins are delicious but optional - some kids prefer granola without them.
- Pressing mixture into an oval before baking creates better clumping.
- Store in an airtight container for up to one week.
