PB&J Bars

Ingredients

  • 2 cups all-purpose flour
  • 1¾ cups oats
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon cinnamon
  • 1 cup unsalted butter, melted and cooled to room temperature
  • ¾ cup dark brown sugar
  • 1 cup creamy peanut butter
  • ½ cup jelly or jam of choice

Instructions

  1. Preheat oven to 350°F. Line a 9x9 pan with parchment paper. Melt butter and allow to cool while prepping other ingredients.
  2. In a large bowl, combine flour, oats, cinnamon, baking soda, baking powder, and brown sugar. Stir to combine.
  3. Add melted butter and mix until a crumbly mixture forms.
  4. Press about ¾ of the mixture (reserve 1½ cups for topping) firmly into the bottom of prepared pan.
  5. Bake base for 10 minutes to set.
  6. Remove from oven and spread peanut butter evenly over hot base (it will melt and spread easily). Top with a thin layer of jelly or jam.
  7. Sprinkle remaining crumble evenly on top.
  8. Bake for an additional 18-22 minutes until crumble is light golden brown.
  9. Cool completely before slicing - this is crucial since the peanut butter needs to set!

Notes

  • These are very hearty bars - a little goes a long way.
  • Must cool completely before cutting or the melted peanut butter will make a mess.
  • Store in an airtight container in the refrigerator for up to one week.
