PB&J Bars

Ingredients
- 2 cups all-purpose flour
- 1¾ cups oats
- 1 teaspoon baking powder
- ¼ teaspoon baking soda
- ½ teaspoon cinnamon
- 1 cup unsalted butter, melted and cooled to room temperature
- ¾ cup dark brown sugar
- 1 cup creamy peanut butter
- ½ cup jelly or jam of choice
Instructions
- Preheat oven to 350°F. Line a 9x9 pan with parchment paper. Melt butter and allow to cool while prepping other ingredients.
- In a large bowl, combine flour, oats, cinnamon, baking soda, baking powder, and brown sugar. Stir to combine.
- Add melted butter and mix until a crumbly mixture forms.
- Press about ¾ of the mixture (reserve 1½ cups for topping) firmly into the bottom of prepared pan.
- Bake base for 10 minutes to set.
- Remove from oven and spread peanut butter evenly over hot base (it will melt and spread easily). Top with a thin layer of jelly or jam.
- Sprinkle remaining crumble evenly on top.
- Bake for an additional 18-22 minutes until crumble is light golden brown.
- Cool completely before slicing - this is crucial since the peanut butter needs to set!
Notes
- These are very hearty bars - a little goes a long way.
- Must cool completely before cutting or the melted peanut butter will make a mess.
- Store in an airtight container in the refrigerator for up to one week.
