Power Muffins

Prep: 15 minutes Bake: 12-14 minutes Yield: 20-24 mini muffins

Ingredients

  • 1½ cups whole wheat flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • ¾ cup protein powder
  • 1 cup mashed bananas (about 3 medium)
  • 1 large egg, room temperature
  • ½ cup vegetable oil
  • 1 teaspoon vanilla extract
  • ½ cup mini chocolate chips

Instructions

  1. Preheat oven to 375°F. Line a mini muffin pan with paper liners.
  2. Combine flour, baking soda, and salt in a small bowl. Stir in chocolate chips.
  3. Combine protein powder, bananas, egg, oil, and vanilla in a medium bowl.
  4. Add dry ingredients and mix just until combined.
  5. Pour into prepared muffin wells and bake 12-14 minutes or until a toothpick comes out clean.
  6. Cool 5 minutes in the pan before removing and cooling on a baking rack.

Notes

  • Do not overbake - muffins should be just done when toothpick comes out clean.
  • Pour a little water into any empty muffin wells to prevent burning.
  • Yield depends on how full you fill each muffin well.
  • Store in an airtight container for up to one week.
