Protein Bars

Ingredients

  • 2¼ cups whole oats
  • ½ cup protein powder
  • ¾ cup rice crispies
  • ½ cup creamy almond butter
  • ¼ cup Nutella
  • ½ cup honey
  • 1 teaspoon vanilla
  • 1 tablespoon coconut oil

Instructions

  1. Grind the oats into a powder in a food processor, then combine with protein powder and rice crispies in a large bowl.
  2. In a small saucepan, heat almond butter, Nutella, honey, and coconut oil until smooth and creamy. Remove from heat and stir in vanilla.
  3. Mix wet and dry ingredients until well combined.
  4. Transfer mixture into a lined 9x9 brownie pan. Spread evenly and smooth (use the bottom of a 9x5 loaf pan to press down).
  5. Refrigerate for 30 minutes, then bring back to room temperature before slicing.
  6. Cut into bars (approximately 1.5 inches by 2.5 inches).

Notes

  • Different nut butters can be substituted - adjust coconut oil amount to match the oil content of different butters.
  • Store in an airtight container for up to one week.
  • Let bars come to room temperature before slicing for clean cuts.
