Protein Bars

Ingredients
- 2¼ cups whole oats
- ½ cup protein powder
- ¾ cup rice crispies
- ½ cup creamy almond butter
- ¼ cup Nutella
- ½ cup honey
- 1 teaspoon vanilla
- 1 tablespoon coconut oil
Instructions
- Grind the oats into a powder in a food processor, then combine with protein powder and rice crispies in a large bowl.
- In a small saucepan, heat almond butter, Nutella, honey, and coconut oil until smooth and creamy. Remove from heat and stir in vanilla.
- Mix wet and dry ingredients until well combined.
- Transfer mixture into a lined 9x9 brownie pan. Spread evenly and smooth (use the bottom of a 9x5 loaf pan to press down).
- Refrigerate for 30 minutes, then bring back to room temperature before slicing.
- Cut into bars (approximately 1.5 inches by 2.5 inches).
Notes
- Different nut butters can be substituted - adjust coconut oil amount to match the oil content of different butters.
- Store in an airtight container for up to one week.
- Let bars come to room temperature before slicing for clean cuts.
