Soft Baked Oatmeal Bars

Prep: 10 minutes Bake: 18-20 minutes Yield: 16 bars

Ingredients

  • 1 cup old fashioned oats
  • 1/3 cup oat flour (finely ground oats)
  • 1/2 teaspoon ground cinnamon
  • 1/2 teaspoon fine sea salt
  • 1/3 cup creamy peanut butter
  • 1/4 cup melted coconut oil
  • 1/4 cup honey
  • 1/3 cup light brown sugar, lightly packed
  • 1 teaspoon pure vanilla extract
  • 1 large egg
  • 1 large egg yolk
  • 1/3 cup mini chocolate chips

Instructions

  1. Preheat oven to 325°F and line a 9x9 brownie pan with parchment paper.
  2. In a large bowl, combine all ingredients except chocolate chips. Mix by hand until well combined.
  3. Fold in the chocolate chips.
  4. Pour mixture into prepared pan and spread evenly.
  5. Bake for 18-20 minutes, until edges are lightly golden.
  6. Cool completely before cutting into bars.

Notes

  • Different nut butters can be substituted, but add slightly more dry ingredients to account for higher oil content.
  • Protein powder can be substituted for the brown sugar - add 1 teaspoon molasses if making this substitution.
  • Make oat flour by grinding oats in a food processor until fine. Store extra oat flour in an airtight container.
