Soft Baked Oatmeal Bars

Yield: 16 bars
Ingredients
- 1 cup old fashioned oats
- 1/3 cup oat flour (finely ground oats)
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon fine sea salt
- 1/3 cup creamy peanut butter
- 1/4 cup melted coconut oil
- 1/4 cup honey
- 1/3 cup light brown sugar, lightly packed
- 1 teaspoon pure vanilla extract
- 1 large egg
- 1 large egg yolk
- 1/3 cup mini chocolate chips
Instructions
- Preheat oven to 325°F and line a 9x9 brownie pan with parchment paper.
- In a large bowl, combine all ingredients except chocolate chips. Mix by hand until well combined.
- Fold in the chocolate chips.
- Pour mixture into prepared pan and spread evenly.
- Bake for 18-20 minutes, until edges are lightly golden.
- Cool completely before cutting into bars.
Notes
- Different nut butters can be substituted, but add slightly more dry ingredients to account for higher oil content.
- Protein powder can be substituted for the brown sugar - add 1 teaspoon molasses if making this substitution.
- Make oat flour by grinding oats in a food processor until fine. Store extra oat flour in an airtight container.
